    1 eggplant peeled and sliced in .25 inch thickness
    3 med. tomatoes diced
    1 c colby cheese (or any cheese on hand)
    1 c textured soy protein
    2 tsp Taco seasoning mix
    1/4 tsp Tone's Garlic Pepper seasoning
    2 Tbsp Olive oil


Makes 8 servings
Prepare textured soy as suggested. (per 1 cup of soy, add 2 cups of boiling water and wait 10-15 minutes, then drain excess water). Layer eggplant in a casserole dish, spoon soy over layer, top with layer of tomato and cheese. Add second layer of eggplant and rest of tomato until all eggplant is covered. Place in oven at 400 for 2 hours until all liquid is absorbed. (Optional) you can add more cheese on top if you like.
