Introduction

This is becoming my favorite salad. It's even better the next day. This is becoming my favorite salad. It's even better the next day.
Number of Servings: 6

Ingredients

    1-15 ounce can black beans, drained and rinsed
    2 cups cooked long-grain rice
    1 green bell pepper, chopped
    1/2 red bell pepper, chopped
    1 tomato, seeded and chopped
    1/4 cup chopped red onion
    1/2 cup favorite oil and vinegar dressing
    1/4 cup chopped cilantro
    1/2 cup Feta cheese crumbles


Directions

In large mixing bowl combine all ingredients. Toss gently to combine. Chill until ready to serve.
