Introduction

This is a delicious low-carb high protein snack or meal. I got this recipe from katheats.com and I modified it for my taste. Kath originally used smoked salmon but I only had tuna. You could also try it vegetarian and use chopped spinach or swap out some of the cheese for feta. The possibilities are endless... This is a delicious low-carb high protein snack or meal. Number of Servings: 10

Ingredients

    2/3 cup 2% cottage cheese
    2 Tbsp grated parmesan
    4 eggs
    1/2 cup whole wheat flour
    3 Tbsp water
    5 oz can of solid white albacore tuna
    tsp Dried dill or chives
    tsp of salt
    dash of garlic powder

Directions

Beat eggs. Mix all ingredients except grated parmesan. Pour into sprayed muffin pan or sprayed muffin cups (or they will stick) and bake at 400 degrees for 15 minutes. Take out, sprinkle parm on top and bake for another 5-7 minutes.

Make 10 muffins.
