Introduction

A simple spinach pesto sauce. Using vegetable stock as a base allows you to greatly reduce the amount of olive oil usually used in a traditional pesto sauce. A simple spinach pesto sauce. Ingredients

    *4 cups fresh spinach
    *1 cup fresh basil
    * 1/4 cup of sliced almonds, toasted
    *1/2 cup of vegetable stock
    *1 tbsp. extra virgin olive oil
    *Salt and pepper to taste

Directions

1. Toast almonds in small frying pan.
2. Combine spinach, basil, almonds and vegetable stock in food processor. Process until smooth, adding additional spinach to thicken sauce if necessary.
3. Add extra virgin olive oil. Process.
4. Serve over pasta of choice.
