    2 regular cans of fat free refried beans
    1 can of chicken
    2 small cans of tomato sauce
    2 cups shredded sharp cheddar cheese
    10 flour tortillas
    1 tsp ground cumin
    2 tbsp paprika
    1 tbsp garlic powder


In a bowl: mix drained chicken, refried beans, and 1 cup cheese. Mix until well blended.

In a separate bowl mix tomato sauce, cumin, garlic powder, and paprika.

In a large baking dish, pour half the tomato sauce mixture. Spoon bean mixture into tortillas and place in baking dish. Once the dish is full of the enchiladas, pour remaining tomato sauce over, and sprinkle cheese.

Bake at 375 degrees for 30 minutes, or until heated through and cheese on top has melted. Serve with sour cream, hot sauce, and/or salsa.

Makes about 5 servings (two enchiladas = 1 serving)

  • What is a can of chicken? Like a can of tuna? What do you mean drain? I think I'll try this but use a roasted chicken and shred it.... - 11/23/10
