Ingredients

    1 lb. pasta , any shape
    finely grated zest of one lemon
    1 cup basil leaves, washed and dried
    1 cup fresh spinach
    2 Tbsp. freshly grated parmesan cheese
    5 Tbsp. olive oil
    salt and pepper to taste

Directions

Bring a pot of lightly salted water to a boil. Add the pasta and stir a few times to ensure that the pasta does not stick to itself. Boil vigorously for the time recommended on the pasta package or until the pasta is tender. While the pasta cooks, combine the lemon zest, basil, and garlic in the work bowl of a food processor and process until finely chopped. Add the cheese, oil, salt and pepper and process until the mixture has become a rough paste. Transfer the mixture to a serving bowl and stir 1/2 cup of the pasta water into the pesto. Drain the pasta and toss it in the bowl with the sauce. Adjust the seasoning.
