I used a 9x13 pan and made 15 serverings. I used a 9x13 pan and made 15 serverings.
Number of Servings: 15


    2 C Barley Flour
    2 teas baking soda
    1 teas baking powder
    2 teas cinnamon
    2 whole eggs
    2 egg whites
    1 C Xylitol
    1 C + 1 Tbs unsweetened applesauce
    1 tsp vanilla
    1 can (15oz) Libby's pumpkin


Beat all ingredients very well. Use a 9x13 cake pan and bake at 350 for 45 minutes. Serve with Lite Cool Whip.
