A quick salad that goes well with fish or chicken. A quick salad that goes well with fish or chicken.
Number of Servings: 2


    1 large red capsicum, chopped into 1cm cubes
    2 lebanese cucumbers, chopped into 1cm cubes
    3 ripe tomatoes, chopped into 1cm cubes
    1/3 cup (50g) kalamata olives, chopped
    1/2 small red onion, fimely sliced
    60g good quality feta

    1 tbsp olive oil
    1/2 tbsp red wine veingar
    pinch caster sugar
    1/4 tsp ground sumac (optional) or salt & pepper
    2 tsp finely chopped tarragon & tarragon flowers (or herbs of choice)


Combine salad ingredients, combine dressing ingredients and dress just before serving.

The capsicum can be roasted first, but doesn't need to be.

Can add finely chopped iceberg lettuce.
