    *Extra Virgin Olive Oil, 1 tbsp (remove)
    Egg, fresh, 2 large (remove)
    Bread crumbs, dry, grated, seasoned, 1 cup (remove)
    Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb (remove)
    Onions, raw, 1 medium (2-1/2" dia) (remove)
    Red Ripe Tomatoes, 1 medium whole (2-3/5" dia) (remove)
    Parmesan Cheese, grated, 1 cup (remove)
    Feta Cheese, 1 cup, crumbled (remove)


1. Preheat oven to 350 and grease baking sheet.

2. Slice eggplant into 1/2 in thick slices, coat in egg, and then coat in bread crumbs.

3. Place EVOO in skiller and fry eggplant on both sides until browned.

4. Slice Onion and Tomato.

5. Layer eggplant, onion, tomato, parmesan, and feta cheeses in pre-greased baking dish.

4. Bake 30 minutes until cheese is melted and bubbly.

5. Serves 8! Enjoy!
