Ingredients

    1 onion sliced
    1 lb ground beef lean
    16 oz V 8 juice
    1 cup rice
    1 tsp chili powder
    2 tsp salt
    1/8 tsp black pepper
    6 strips of bacon fried and drained.

Directions

Makes 8 servings
Brown ground beef and onion. Stir in rice, tomatoes, chili powder, salt, and pepper. Pour into a greased 8 inch square baking pan. Cover and bake for 1 hour. Uncover and put on the bacon the last 15 minutes. Be sure to put the bacon down in the rice mixture so it will not burn.
