    1 tsp. olive oil
    1/2 Cup frozen Hash Browns
    1/2 Cup frozen Spinach
    1 egg
    2 Tbsp. Sharp shredded cheddar cheese


In a small nonstick pan over medium heat add olive oil. Layer with hash browns followed by spinach. Crack egg over the mixture and sprinkle with salt and pepper. Top with cheese and cover for about 5 minutes until cheese is melted, hash brown look brown and cheese is melted. YUM!
