    4 chicken breasts (about 1 lb)
    1 c. cracker crumbs
    1/4 c. flour
    1 egg, beaten
    Salt and pepper
    2 Tbs oil


Season chicken with salt and pepper; dip in egg, then in cracker and flour mixture and then lightly brown in 2 Tbs. oil.

Place chicken in a 2 quart casserole dish. Cover with lid or foil and bake at 325 degrees for 1 hour until tender.

Makes 4 servings.

This recipe can be easily doubled.
