    6 eggs
    1 cup cheddar cheese, shredded
    1/2 cup mozzarella cheese. shredded
    1 cup 2% milk
    1 red or yellow bell pepper, cut into strips
    1 cup frozen or fresh spinach


Preheat oven to 375 degrees. Lightly spray a pie dish with cooking spray. Whisk eggs and milk together. Fold in shredded cheeses, bell pepper strips and spinach. Pour egg mixture directly into pie pan. Cover with foil and bake for 20 minutes, remove foil and bake another 5-10 minutes.
