    6 cups prepared peaches
    1 1/4 cup chopped red onion
    4 jalapeno peppers, finely chopped
    1 red pepper, chopped
    2 cups frozen corn
    1/2 cup loosely packed finely chopped cilantro
    1/2 cup white vinegar
    2 tbsp liquid honey
    1 clove garlic, minced
    1 1/2 tsp ground cumin
    1/2 tsp cayenne pepper


Cut up the peaches, onions, jalapenos, and red pepper. Combine with corn, vinegar, liquid honey, and garlic in a stainless steel or enamel saucepan. Bring to a boil and cumin and cayenne pepper. Let boil gently for five minutes.
Take pan off stove and add cilantro, stirring it in to mix well.
Ladle salsa into glass jars and process for 10 minutes in a canner. Remove jars and ensure they have sealed.
Goes GREAT with fish, shrimp, scallops, chicken, and pork, and also with tortilla chips! Makes 16 -1/2 cup servings.
