Number of Servings: 4

Ingredients

    3 red onions, halved and sliced
    2 garlic cloves, thinly sliced
    3 large fresh green peppers thickly sliced
    2 cups long grain rice
    2 cups beef stock
    400g diced tomatoes (canned)
    400g red kidney beans
    1/4 cup sour cream
    1 bunch fresh coriander leaves

Directions

1. Heat the a saucepan over medium heat and spray with light oil spray. Add onion, garlic, hilli and cook stirring for 5 minutes.
2. Add the rice and cook, stirring for 3 minutes or until glassy. Add the stock and tomato and bring to the boil. Reduce heat to medium-low and cook covered for 12 minutes or until liquid is absorbed. Cover and set aside for 10 mins or until rice is tender. Add the beans and combine.
3. Divide among serving bowls and top with sour cream and corianer
