This is a very simple, healthy chicken dinner that is sure to please! This is a very simple, healthy chicken dinner that is sure to please!
Number of Servings: 3


    1 pkg. (12oz./3 breasts) of Purdue Fit & Easy boneless, skinless chicken breasts-you can also use the thin sliced for this as well (just remember to adjust the calculator)

    1 c. of Extra Virgin Olive Oil (Keep in mind that this is just for marinating purposes-pretty much all the extra will get thrown out and the majority will cook off, which is why the recipe calculator is different than listed here)

    2 tsp. minced garlic form jar

    1 tsp. salt of your choice

    1 tsp ground black pepper

    1 tsp. ground paprika

    1 lemon-cut in half and squeezed for juice ( you may also use lemon juice from a bottle-but you will notice a big difference with the fresh!)


In a small mixing bowl combine the olive oil, lemon juice, garlic, salt, pepper and paprika. (for the lemon, simply cut in half and squeeze the juice from each half into the mixing bowl) Next, blend the mixture together thoroughly with a wire wisk.

Take the marinade and carefully pour it all into a gallon size Ziplock Bag.

Next, remove chicken from packaging and rinse under cool water and place onto a paper towel to dry. Then using a sharp knife, cut tiny slits all over the chicken breasts.

Then place the chicken into the gallon bag of marinade and be sure to SEAL THE BAG TIGHTLY!

Once secured, rub the marinade into the chicken through the bag and then place the bag into the fridge. You can leave the chicken to marinade overnight or just a few hours.

When ready to cook, place the chicken onto a non-stick electric grill or your outdoor grill and cook until no longer pink. Be careful not to overcook-otherwise it will dry out!.

I have served this over angel hair pasta or with cous-cous and a steamed veggie-ENJOY!
