    1/8 c. flour
    lemon pepper
    2 4-oz tilapia filets
    3 oz. white wine
    3 Tbs. butter
    4 tsp. lemon juice


Combine flour and lemon pepper in shallow dish.
Rinse fish and coat in flour.
Heat 1 Tbs. butter in non-stick skillet sprayed with Pam. Cook fish 3-4 minutes per side, until opaque. Keep warm in low oven.
Combine wine and lemon juice in skillet until simmering. Add butter; cut heat when melted.
Serve fish and sauce over rice.

Serves 2 (1 filet and ~3 Tbs sauce)
