Introduction

This is a great base for lamp, chicken or beef stew. Add any of those meats and it will warm you up on a winter's night and fill you with protein! Leave it vegetarian and it's divine as well! Ingredients

    2 c chicken (or vegetable) broth
    1 c water (or liquid from cooking chickpeas)
    1.5 c hummus
    2 c chickpeas
    1 tbsp Olive Oil
    1 tbsp parsley
    salt and pepper to taste

Directions

Pour broth, water and hummus into stock pot. Bring to a boil, stirring often to incorporate hummus. Add chickpeas, olive oil, parsley and spices (try cayenne pepper sometime - yum!). You can also add 1-2 tbsp of lemon juice - VERY good! Cover and boil 10 minutes.

Serve hot.
