Introduction

Number of Servings: 12

Ingredients

    1/2 pound ground sausage (I use Meijer brand)
    4 slices low calorie bread (I use Aunt Millie's Light Whole Wheat)
    1 cup shredded cheddar cheese
    10 eggs, beaten
    2.5 cups skim milk
    1/2 c diced red pepper
    1/2 c diced onion
    1/2 c fresh spinach
    1 tsp salt
    pepper to taste

    Whatever other veggies and as many as you want!!!

Directions

Cube the slices of bread and place evenly in a greased 9x13" baking dish. Sprinkle with browned sausage, veggies and cheese. Mix eggs, milk, salt, pepper, pour over mixture.

Bake for 45 minutes or until set at 325
