Number of Servings: 4

Ingredients

    3 Chicken Breasts (4 ounces each)
    3 cups Healthy Harvest Rotini (uncooked)
    12 Leaves Fresh Basil (chopped)
    3 tsp Dried or Fresh Oregano
    3 Medium Red Ripe Tomatoes (diced)
    1 Clove Garlic (chopped or pressed)
    1 tbsp Extra Light Olive Oil
    1/2 Cup Chopped Green Pepper
    1/4 Cup Chopped Onion
    4 tbsp Red Wine Vinegar
    Salt, to taste
    Pepper, to taste
    4 ounces Part Skim Mozzerella Cheese (shredded)

Directions

Cut chicken breasts into strips. Heat oil in a medium sauce pan over low heat. Add raw chicken. Cook chicken completely.

Boil Pasta until almost done. Rinse.

In a bowl combine diced tomatoes, green pepper, onion, garlic, vinegar, salt, pepper, basil, and oregano.

Preheat oven to 350 degrees.

In a baking dish, add pasta first, then chicken, and then cover with vegetable mixture. Cover with shredded cheese. Bake at 350 degrees until cheese is melted.

    Very, very good and simple to make; but, I found a huge discrepancy in the nutritional information given with the recipe and that given when I used SparkPeople's recipe calculator. It might be more helpful to have serving sizes in ounces so we can cut down and still know exactly what we're getting. - 6/7/07

    The herbs really make this dish, using fresh basil and oregano is a must! It is nice and light, but a bit too dry given there is no sauce. We drizzled some more of the extra light olive oil over our meals and that helped. - 12/23/11

    Incredible!
    I made this today for guests (brave, aren't I?) and everyone really enjoyed it and wanted the recipe. I substituted already roasted chicken and canned, diced tomatoes, and left out the oregano. It made about 8 servings, and I also think the nutritional info may be off. Will make it again for sure! - 8/7/11

    I was so excited to try this, but was so disappointed. The best part was the fresh herbs. (If you aren't using fresh herbs, forget it.) There was way too much pasta. I added an extra ounce of mozzarella and I still thought it was bland and not very exciting. - 9/14/10
