A spicy kick to chicken breasts! A spicy kick to chicken breasts!
Number of Servings: 6


    3 skinless, boneless chicken breasts
    2 tsp garlic, minced
    1 medium onion, chopped
    6 low carb tortillas
    1 can fat free refried beans
    3/4 cup shredded cheddar cheese
    1 cup canned diced tomatoes with green chilies
    3 scallions, chopped
    1 avocado, diced


Brown chicken, garlic and onion in a skillet until cooked through.
Warm tortillas according to package directions.
Make avocado salsa while chicken is cooking.
Pour tomatoes and their juice into a large bowl.
Slice scallions and their tops and add to the bowl.
Remove pit from avocado and cut into 1/4 inch pieces.
Add to the bowl.
Stir to mix and serve at once.
Place a tortilla on each plate.
Top with chicken and salsa. Serve.
