Introduction

Ingredients

    1 box (16 oz.) multigrain spaghetti
    2 T. Olive oil
    2 pounds of shrimp cleaned and deveined
    1/2 c. onion, chopped
    3 large cloves of garlic
    1/2 cup chicken broth
    1 c. white wine
    2 c. halved cherry or grape tomatoes
    4 c. fresh spinach
    1 t. red pepper flakes
    1 t. salt
    dash of pepper
    2 T. butter

Directions

Cook spaghetti according to package directions. Drain and return to pot. Add fresh spinach and tomatoes to spaghetti. Cover to keep warm. While spaghetti is cooking, in a large skillet add 2 T. Olive oil and onion. Cook onion for 2 minutes or until slightly clear. Add shrimp and cook for 2 more minutes, stirring frequently. Add chicken broth, wine, garlic, salt, pepper and red pepper flakes and continue to cook until shrimp are pink, about 5 minutes. Pour contents of skillet over pasta and vegetables. Serve.
