My favorite go to recipe for a healthy vegan dinner. This can be varied many ways by using other varieties of beans, rice or grains, vegies and spices. Number of Servings: 4

Ingredients

    1 can black beans drained
    1 cup rice cooked in 2 cups water
    1 medium chopped onion
    1 medium chopped red pepper
    1 T olive oil
    1 tsp creole seasoning or to taste
    1 can diced tomatoes with chilis

Directions

While rice is cooking in rice cooker, saute onion and red pepper in oil. When soft, add drained beans, tomatoes, and seasoning. Add rice to pot when it is finished cooking. Stir together and enjoy.
Makes 4 servings of about 2 cups each.
