    5 ounces washed, read-to-eat, italian style salad (8 cups)
    1.5 cup egg beaters
    1/3 cup prepared pesto
    3 tsp olive oil
    3 TBSP Parmesans


Place the lettuce in a microwave-safe bowl and microwave on high for 3 minutes. Place on 3 plates. Mix egg substitute and pesto together. Heat the oil in a medium size nonstick skillet on high. Reduce the heat to low or remove the pan from the heat; add the egg mixture. Scramble about 1 minute, or until desired doneness. Serve over lettuce. Sprinkle with Parmesan cheese.

  • Nice variation on scrambled egg dishes! We added a little onion and sweet red bell pepper for color and flavor! I really liked the microwaved lettuce! Had never tried that. We'll have this again. - 9/4/10
