    1 TBSP olive oil
    2 leeks cleaned and chopped (1 1/2 cups)
    6 cups reduced sodium chicken broth
    2 (1 lb) bags frozen cauliflower, thawed
    1/2 cup fat free half and half
    1/8 tsp nutmeg


Heat the oil in a large nonstick saucepan over medium heat. Add the leeks and cook, stirring frequently, until softened but not browned, about 4 minutes. Add the broth and cauliflower; bring to a boil. Cover and simmer until the cauliflower is tender, about 10 minutes. Remove from the heat and stir in the half and half and nutmeg.
Puree the soup with a hand held imersible blender or in a food processor or blender in batches if necessary.
