    3 medium mashed bananas
    3/4 C packed brown sugar
    1 egg, slightly beaten
    1/3 C softened unsalted butter
    1t baking soda
    1t baking powder
    1/2t salt
    1 1/2C flour
    1 1/2C mini dark chocolate chips


Heat oven to 375 degrees and lightly oil muffin pan.
Mix together by hand bananas, sugar, egg and butter, set aside. Mix together by hand flour, salt, baking soda and baking powder. Add dry ingredients 1/3 at a time to wet ingredients, stirring until just moist. Lastly add chocolate chips and stir until evenly distributed. Spoon batter out into muffin tin and bake for 18 minutes. Makes 12 muffins.
