    1/3 large Red tomato, chopped,
    1 cup fresh spinach, chopped
    1 small Sweet Red Bell Pepper, chopped
    1 small Sweet Orange Bell Pepper, chopped
    1 cup fresh mushrooms, sliced
    3 Egg whites or egg substitute
    1/4 cup Kraft Finely Shredded Sharp Cheddar Cheese
    2 Morning Star Breakfast Sausage Patties, chopped
    3 Mission Carb Balance Whole Wheat Fajita Size Tortillas


In a large bowl, combine finely chopped tomato, spinach, bell peppers, and mushrooms. Chop the sausage patties and add to veggie mixture.

Add in the egg. Mix well.

In a hot skillet, add the mixture. Cook well. Turn off the heat and add the cheese, stirring until melted.

Serve on whole-wheat tortillas.

You can use any number of substitutions in this recipe and can mix in lots of veggies.
