Ingredients

    4 chicken thighs, boiled until cooked through
    1 can green chili peppers, diced
    1 8 oz packaged reduced fat cream cheese, softened
    1 10 oz can green enchilada sauce, mild
    3/4 cup cheddar cheese, shredded
    6 flour tortillas
    1 cup lettuce, shredded
    3/4 cup tomatoe, diced or sliced

Directions

Preheat oven to 350 degrees, get out a shallow baking dish and cover the bottom with about 1/2 enchilada sauce.
Shred the cooked chicken thighs and combine with green chili peppers and cream cheese.
Lay out a tortilla and put 1/6 of the chicken-cream cheese mixture inside. Roll up and lay in baking dish. Repeat until all tortillas and mixture is gone.
Cover enchiladas with sauce and sprinkle with cheese. Cover dish with foil and bake for 20-30 minutes or until bubbly. Serve with shredded lettuce and tomatoes.
