    2 lbs zucchini grated, drained of excess water
    2 tbsp butter
    1 tsp olive oil
    1 1/2 cups bread crumbs
    lemon zest from 1 lemon
    1 tsp chopped thyme
    2 garlic cloves
    Salt tsp


Toss grated zucchini with salt. place in colinder for at least 20 minutes or in the fridge overnight.
Squeeze and put in a shallow oven dish.
In a frying pan heat oil and butter, add garlic, thyme, and lemon zest. Cook for a minute or two.
Add bread crumbs. Toast for several minutes.
Add to zucchini mixture.
Heat in 200C oven 350F for 30 minutes.
