    1/3 cup potato (about 1 red bliss)
    1 slice danish or imported ham, diced
    1/4 cup egg substitute
    2 tsp. reduced fat cheddar cheese
    1/2 tsp rosemary
    2 tsp. margarine
    1/4 tsp. salt


Stab potato with a fork in a few places and microwave for 1 minute. Cook potato in margarine for about 2 mintes til slightly tender adding rosemary and salt. When potato is done, add egg beater and sprinkle with ham and cheese. Scramble mixture until eggs are cooked. Makes 1 serving.
