Small servings, but great for those who can eat Spelt and not Wheat! Small servings, but great for those who can eat Spelt and not Wheat!
Number of Servings: 8


    1/2 Cup Spelt Flour
    1/2 Cup Yellow Corn Meal
    1 1/2 tsp. baking powder
    1/2 tsp. salt

    Mix dry ingredients in a bowl
    In separate bowl combine:
    1/2 cup skim milk
    1/2 of a 1/3 cup of olive oil (I cut a recipe in half, this is what I got)
    large egg


Makes 8 small servings or 4 large servings.

Grease a small baking pan, or 8 tins in a muffin tin.
Combine dry ingredients, then combine wet ingredients in a separate bowl.
Stir wet ingredients into dry just until blended, then drop evenly into muffin tins and bake at 400 degrees for 20 to 25 minutes.
Cornbread is done when toothpick inserted in center comes out clean.
