Introduction
hearty stuffed zucchini that has the flavors of lasagne hearty stuffed zucchini that has the flavors of lasagneNumber of Servings: 8
Ingredients

3/4 cup of finely chopped onion
3/4 cup of finely chopped mushrooms
4 cloves of crushed garlic
1 pound of ground pork
4 ounces of mozzarella cheese
1 (2.5c) jar of classico tomatoe and basil spaghetti sauce
2 large zucchini for baking
2 cups of brown rice (cooked)
Directions
Brown the onion, mushrooms and garlic...add in the ground pork. when the pork is cooked, add the classico and continue to cook to keep the sauce thick.
cut ends off of zucchini and microwave for approximately 5 minutes just to soften the insides (size of zucchini varies cook time)
Gut the insides of the zucchini and put into a bowl. Cut into small pieces. Mix the parts that you gutted with the spaghetti sauce, 1/2 the cheese and the rice. Add back into zucchini shells and cover with the remaining cheese.
Line a cookie sheet with foil and place stuffed zucchini on the sheet. Bake for 30 minutes on 350 degree heat.
cut in half when they are done - serves 8 (my zucchini were large!)
