Just throwing together what I had to make a pretty delicious pasta bake! Just throwing together what I had to make a pretty delicious pasta bake!
Number of Servings: 8


    200g dry whole wheat pasta
    1 half butternut squash, chopped (about 325g)
    100g chopped onion
    200g chopped cauliflower
    100g chopped broccoli
    1 egg
    150g or about 3/4c tomato sauce
    75g light sour cream
    100g Mersey Valley Cheese, or other crumbly cheese
    3oz/84g light mozzarella


Preheat oven to 375F/180C.

Prepare pasta according to directions. In a large bowl, mix crumbly cheese, egg, tomato sauce, sour cream, and garlic/herbs/salt/pepper to taste. Add pasta & veggies, and stir thoroughly.

Pour mixture into a greased 9x12 pan. Top with mozzarella cheese and cover with tinfoil. Bake for 22 minutes, then remove foil and bake 3-5 more minutes until cheese is browned.

Makes 8 servings.
