Ingredients

    1/2 cup long grain white rice
    8 cups of sweet onion (chopped)
    2 tablespoons of butter
    1.5 cup grated swiss cheese (about 5 oz)
    2/3 cup of half and half
    1 tsp salt

Directions

Cook rice for 5 minutes (boil) then drain water
Cook onions in the butter until limp but not brown
Combine all ingredients
Pour into a casserole dish (2 quart dish)
Bake uncovered for 1 hour at 350 degrees
If the top begins to brown too much you can cover for last 15-20 minutes.
