A variation on our other zucchini cake recipe to add some salmon. A variation on our other zucchini cake recipe to add some salmon.
Number of Servings: 6


    2 cups of shredded zucchini
    1 can of salmon (small tuna)
    1/3 cup of egg beaters
    1 1/2 cups of plain bread crumbs
    2 tsp of Old Bay (can reduce if you want a little less sodium)
    1/2 cup chopped onion
    1 1/2 tbsp of miracle whip (or other mayo substitute)


Mix all ingredients and form into 6 patties.

Fry in olive oil until cooked.
