    1.5 cups plain non fat yogurt
    1/6 cup (1.5 oz) sugar
    1 tsp grated orange zest
    1 tsp unflavored gelatin
    1/6 cup (1.5 oz) non fat evaporated milk
    3/4 cup (6oz) fresh blackberries
    1/2 canteloupe peeled, seeded, and cut into 1/2 inch cubes


1) In a large bowl, stir together the yogurt, sugar, orange zest, and vanilla until smooth.
2) In a small, heavy saucepan, sprinkle the gelatin over the evaporated milk. Let stand for 5 minutes to allow the gelatin to soften. Place over low heat and stir constantly until the gelatin dissolves, about 3 minutes. The milk should be hot to the touch, but not come to a boil.
3) Stir the gelatin mixture into the yogurt mixture. Refrigerate, stirring occasionally, until the mixture is the consistency of softly set pudding about 1.5 hours.
4) Spoon 1/4 cup of the yogurt into 3 dishes. Reserve 9 whole berries for garnish. Divide the canteloupe and remaining berries evenly among the glasses/dishes. Top with an equal amount of the remaining yogurt mixture.
5) Garnish with three blackberries each and serve or refrigerate.
