    1/2 c. plus 2 Tbsp. rolled oats
    3/4 c. oat flour
    1/4 c. plain, low fat yogurt
    1/4 c. plain almond milk
    2 Tbsp. brown sugar
    1/6 c. applesauce
    1 large, ripe banana,mashed
    1 tsp baking powder
    1/2 tsp. baking soda
    1/2 Tbsp. flax seed meal
    1 1/2 Tbsp water
    1/4 tsp nutmeg
    12 almonds, chopped
    1/4 tsp salt
    1/2 tsp cinnamon


Preheat oven to 400 degrees F.

Mix rolled oats, yogurt, and almond milk together in a bowl, allow to sit for 10 min.

Pulse 1 cup of oats in the blender or food processor until they reach a powdery consistency. This should produce the 3/4 cup needed.

Combine the oat flour, salt, sugar, spices, baking powder and baking soda in a separate bowl.

Take the flax seed and the water, and whisk them together until creamy (this can be done in the blender). Add the flax seed mixture, the mashed banana, and the applesauce to the soaking oat mixture, and mix well.

Now add dry oat flour mixture to the wet mixture and mix together well. Add in the chopped almonds and stir until evenly incorporated.

Fill greased or lined muffin cups 2/3 of the way, bake for 16-20 minutes. Makes 6 muffins.
