Introduction

Buttery...Crispy...and super yummy! Normally, I use light butter when cooking for my family...but, in this recipe, the real deal just can't be beat! I do add a little whole wheat flour, though, so I feel like I made it a bit healthier :) Buttery...Crispy...and super yummy! Ingredients

    -Splenda White Sugar Blend for Baking, 1/4 cup + 2 tablespoons
    -Brown Sugar, 0.75 cup, packed
    -Organic All-Purpose White Flour, 1.5 cup
    -Organic Whole Wheat Flour, 0.5 cup
    -Baking Soda, 1 tsp
    -Salt, 1 tsp
    -Butter, unsalted, 1 cup (I used Smart Balance at room temp)
    -Vanilla Extract, 1 tsp
    -Egg substitute, liquid (Egg Beaters), 0.5 cup
    -Semisweet chocolate, 2 cup chips (I used Nestle mini chips)
    -Water, 1 teaspoon

Directions

Preheat the oven to 350 degrees F (convectional, if you have).

Line two large cookie sheets with parchment paper.

In a bowl, whisk together the flours, baking soda, and salt.

In another bowl, break the butter apart with the spoon and cream the butter together with the sugars.

In another bowl, beat the egg beaters, slightly and add the water and vanilla; beat again (slightly). Mix the egg beater mixture with the creamed butter.

Add the flour mixture slowly to the wet ingredients. Don't overmix. Fold in the chocolate chips.

Drop the cookies 2 inches apart onto the prepared cookie sheets using two tablespoons or a cookie scoop.

Bake them for a total of 8-10 minutes (edges and centers are brown). If you don't have a convectional oven, rotate the cookies 1/2-way through.

Remove the cookies to a wire rack to cool....and, enjoy!
