    3 peaches, pitted and sliced
    8 apricots, pitted and sliced
    6 plums, pitted and sliced
    1/4 cup sugar
    2 tbsp lemon juice
    1 tbsp quick cooking tapioca powder
    1 cup all-purpose flour
    1 tsp baking powder
    1/2 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1 egg
    1/4 cup nonfat milk
    1/4 cup Applesauce


1) Preheat oven to 375. Coat an 8 inch square baking pan with nonstick cooking spray.
2) In a large bowl, toss the peaches, apricots, and plums with half the sugar, the lemon juice, and tapioca. Spread in the pan.
3) Into a medium bowl, sift together the flour, baking powder, cinnamon, nutmeg, and the remaining sugar.
4) In a small bowl, beat together the egg, milk and applesauce until smooth. Add to the combined dry ingredients and stir until blended. The batter will be quite stiff. Spoon the batter randomly over the fruit. Do not be concerned with covering the fruit completely, since the batter will spread during baking.
5) Bake until the topping is well browned and the juices are bubbling around the edge, about 40 minutes. Cool at least 30 minutes before serving. Serve warm or cold.
