    1 Cup quinoa cooked to package instructions with water
    1 pound chicken breast sliced thin
    1 tbsp olive oil
    1 small onion sliced thin
    1 red pepper seeded and sliced thin
    1 yellow pepper seeded and sliced thin
    5 garlic cloves sliced thin
    20 leaves fresh basil, julienne or 3 tbls dried and crushed
    1 1/2 dried red pepper flakes.
    Salt and pepper to taste.


Cook quinoa to package instructions and set aside. Cut up all ingredients so you are ready to cook. Start with the chicken, salt, pepper, and dried red pepper flakes. Cook about 5 min. Add peppers and cook another 2 min. Finish with the onion and garlic. Stir fry until all is cooked through. Turn off you flame and add the quinoa and basil. Stir to combine and serve hot.

  • Ok I made this tonight and I really like it. I did however use Rice Stick Noodles instead of Quinoa because they didn't have it at the store. - 9/7/10
