Number of Servings: 6


    Non-stick cooking spray
    1 medium yellow or white potato, peeled and cut into bite-size pieces.
    1 medium red pepper, seeded and chopped
    2 cups cauliflower florets, cut into bite-size pieces
    1 TBSP. extra-virgin olive oil
    1/2 tsp. garlic powder
    1/4 tsp. onion powder
    1/4 cup skim milk
    1/4 cup Parmesan cheese
    2 TBSP minced fresh Italian parsley for garnish


Preheat oven to 400 degrees. Lightly spray a 9-inch baking dish with canola or olive oil cooking spray and set aside. In bowl, toss potato, red pepper and cauliflower with oil and garlic and onion powders. Put vegetables to prepared baking dish. Drizzle milk evenly over top. Sprinkle with cheese. Cover tightly with foil and bake for 30-40 minutes or until vegetables are tender. Garnish with parsley and serve hot. Makes 6 servings.
