    300g farro, well rinsed & soaked in cold water for 30 minutes then well drained
    2 Tbl extra virgin olive oil
    2 onions, finely chopped
    3 cloves garlic, finely chopped
    6 skinned & boned chicekn thighs, sliced 2cm across the grain
    400g asparagus, coarse ends snapped off and spears cut on the diagonal into 4cm lengths
    8 sundried tomaotes
    1 large grilled capsicum, cored, seeded, peeled & thinly sliced
    3 Tbl lemon juice
    Salt & pepper to taste


In a medium saucepan, boiul the soaked farro in plenty of well-salted water until tender then drain well. Place in a large warm serving bowl and toss with the extra virgin olive oil.

In a medium frying pan sprayed with oil spray cook the onions over a moderate heat with the garlic and chicken. Stir for around 10 minutes until the chicken is well browned and the onion soft.

Boil or steam the asparagus for 2-3 minutes until tender but still slightly crisp. Add the chicken mixture and asparagus to the farro. Stir through the tomatoes, capsicum and lemon juice. Taste and season.
