    500g boneless pork cut into chunks or strips
    Spray Oil
    1 large onion, chopped
    2 garlic cloves, chopped
    2 red peppers, deseeded and roughly chopped
    250g rice
    450ml vegetable stock or water (nutritional values are for using low sodium stock granules)
    1 can artichoke hearts, drained and quartered
    1 can chopped tomatoes


1. Heat oven to 180C. In a large flameproof casserole brown the pork in the spray oil over a high heat.

2. When brown on both sides add the onion, garlic and peppers, then cook for 5 minutes. Add the rice and cook for another 3 minutes.

3. Add the stock or water, the artichokes and tomatoes then bring to a fast boil.

4. Taste the liquid for seasoning. Cover with a tight lid and put in the oven for 20 - 25 minutes.
