Ingredients

1 tablespoon canola oil
1 white onion, diced
1/2 teaspoon dried Italian seasoning
1/2 teaspoon red pepper flakes (or to taste)
12 ounces turkey kielbasa, cut into bite size pieces
8 ounces butternut squash, diced
5 ounces mixed greens, chopped (collard, kale, spinach, etc.)
1 quart chicken broth
14 ounce can diced tomatoes
15 ounce can small white beans
Directions
Makes approximately six 2-cup servings.
Heat oil in a large soup pot over medium-high heat. Add onion and saute until softened, approximately five, stirring frequently. Add Italian seasoning and red pepper flakes and stir until fragrant, about one minute. Add kielbasa and squash and saute for another two to three minutes. Add greens, broth, tomatoes. Bring to a slow boil, stirring regularly.
Reduce heat low, partially cover, and simmer for 20 minutes or until vegetables are tender. Add beans and simmer for five more minutes.
