    Tilapia, 7 oz (or two filets)
    Olive Oil, 1 tbsp
    Thyme leaves, fresh, 1 tsp
    Red Ripe Tomatoes, 1/2 seeded and chopped
    Green Olives, 10 chopped
    Red Pepper Flakes, 1/4 tsp
    Garlic, 3 cloves minced
    Red Onion, 1/8 cup, chopped
    Lime Juice, 1 lime yields
    Salt, 1/4 tsp


Preheat oven to 400 degrees F.

Lightly oil a shallow baking dish and arrange the tilapia in one layer, not touching.

Stir all other ingredients (except salt) together in a bowl. Salt the filets to taste then top with the tomato mixture. Bake for 15 to 20 minutes, until flaky.

Serves 2.
