This is a filling and tasty sandwich great for cutting back on meat. This is a filling and tasty sandwich great for cutting back on meat.
Number of Servings: 2


    2 portobellos, gilled and sliced
    2 TBS olive oil divided
    2 garlic cloves minced
    1/4 dry white wine
    1 TBS apple cider vinegar
    1/2 tsp dijon mustard
    1 cup baby spinich leaves
    4 slices of whole grain wheat bread
    1 cup mozzarella cheese shredded
    4 slices of tomato


Saute mushrooms in 1 TBS of olive oil with minced garlic for about 3 minutes. Add wine to deglaze the pan and until wine has evaporated. Season with pepper and set aside.
Wisk together Vinegar, 1 TBS of olive oil and mustard. Add spinich and toss to coat.
Spray pan with nonstick spray and assemble sandwiches by first adding 1/4 cheese, tomatoes, spinich, mushrooms and top with 1/4 cup of cheese. Cook on both sides until nicely browned and cheese has melted.

    This was one awesome sandwich. My husband was drooling as I was cooking it. Wish there was a way to get the same flavor with out as much calories. I really wanted both sandwiches!!! LOL - 10/13/10
