Introduction

Ingredients

    CAKE
    ****************
    1 1/8 c flour
    1/4 c Ghirardelli (or other high quality) unsweetened cocoa
    1 1/4 tsp baking soda
    1/4 tsp salt
    1 large egg
    1/2 c firmly packed light brown sugar
    1/2 c sugar
    1/2 c whole milk, plus 2 tbsp
    1/3 c strong brewed coffee or espresso
    1/2 c unsalted butter, melted

    FROSTING
    ***************
    1 c powdered sugar
    1 c nutella
    5 tbsp unsalted butter, room temp
    1 tsp vanilla
    1/4 tsp salt
    1/3 c heavy cream


Directions

CAKE

Preheat oven to 350 degrees, prep muffin tins.

Sift together flour, cocoa, baking soda, and salt

In medium bowl, whisk together egg, brown sugar, and white sugar. Whisk in milk, coffee and melted butter. Whisk in dry ingredients. Divide batter evenly among cupcake molds, filling about 3/4 full

Bake for 15 min, or until toothpick comes out clean. Cool for 10 min. Using small spatula or knife, remove cupcakes from pan and continue to cool completely on wire rack.

FROSTING

Beat sugar, nutella, butter, vanilla and salt until well blended. Add cream and beat until fluffy.

Also works well as full cake / mini cakes. Decorate w chocolate sprinkles.
