Number of Servings: 12


    4c fresh broccoli, chopped
    8 -10 fresh green beans, 1 in. pieces
    1 small yellow squash, diced
    1 4oz can mushrooms
    1 13 oz can chicken broth
    3 c water
    1c finely diced ex lean ham
    1 tblsp. dried onion flakes
    24 Tblsp dried instant mashed potato flakes
    2 oz light cream cheese
    .25 c grated chedder cheese


Put all liquids, minus milk, into large pot. Add all vegetables, ham and onion flakes. Bring to boil, simmer for 10 - 15 min. Turn off heat. Add dry potato flakes and stir lightly. Drop cheese all over top of soup. Cover with lid. Wait 5 - 10 min. Gently stir from bottom to evenly distribute cheese. Cover 5 - 10 min. longer. Stir and serve.
