Number of Servings: 6


    1.5 lbs of chicken, cut into 3/4 inch pieces
    1 red bell pepper, cut into short, thin strips
    1 1/4 cups 99.9% fat free chicken broth, divided
    1/4 C reduced-sodium soy sauce
    3 cloves garlic minced
    3/4 tsp. red pepper flakes
    1/4 tsp salt
    2 Tbls cornstarch
    1/3 C chunky peanut butter
    6 cups cooked rice
    3/4 Cup peanuts or cashews, chopped


Makes 6 servings (1 cup rice and 1 cup chicken mixture.)

1. Place turkey, 1 C Proth, soy sauce, garlic, pepper flakes and salt in slow cooker. Cover; cook on LOW 3 to 4 hours

2. Blend cornstarch and remaining 1/4 C. broth until smooth. Stir peanut butter and cornstarch mixture into slow cooker. Cover; cook on HIGH 30 MIn or until cause is thickened. Stir well.

3. Serve over rice. Sprinkle with peanuts.
