Low-Carb Salmon Patties Low-Carb Salmon Patties
Number of Servings: 4

Ingredients

    1 14-16 oz. can salmon, drained
    1 egg, slightly beaten
    1/2 small onion, finely chopped
    1/2 teaspoon Old Bay or favorite seasoning
    2 oz. lemon juice
    8 Whole-Wheat Ritz crackers, crushed to fine crumbs

Directions

Mix together drained, flakes salmon, slightly beaten egg, onion, lemon juice, Old Bay and crushed Whole-Wheat Ritz crackers. Blend well. Divide mixture into fourths and form 4 slightly flattened "meatballs". Heat non-stick skillet, spray with Pam, and saute until golden brown on both sides, about 4 minutes per side.
